When I planted my herb pots this year I bought some chocolate mint, just because it smells good. This year was amazing for the herbs, and the chocolate mint went wild. It seemed like a shame to waste it, so I snipped a bunch of mint, and got out the vodka.
After washing and drying that pile of mint, I stripped off the leaves, tossing icky ones (yes, that is a technical culinary term) and stems. This was a good watching tv activity because it took forever!
Then I chopped them roughly. and squeezed them a little bit to bruise them to release the oils. As you can imagine, my hands smelled great!
I packed the leaves into a clean jar, and poured the vodka over the leaves to cover.
Now it is capped and in the cupboard out of direct sunlight. Shake once a day, and should be ready in six weeks.
