Between vacation then business travel, my kitchen has been without much activity for several weeks. I'm back, and cooking again.
But, we haven't been grocery shopping in awhile, so I had to look in the freezer and pantry for inspiration the other day.
Suddenly I realized I had not made fried potatoes in years, and I didn't need many ingredients for that. And they sounded good on a cold night. Luckily I have gotten over the fear of my mandoline so I peeled and sliced a bunch of russet potatoes.
It's entirely possible I peeled and sliced too many potatoes for two people. Oh well.
I melted a bunch of Crisco shortening in a large pan over medium heat. Honestly, I really couldn't remember how I used to do this!
Into the pan with the potatoes, toss to coat and season with salt.
I don't really fry these to be all that crisp, so cover and let it cook for about 10 minutes, uncover and toss, then recover for another 10 minutes, and so on. These were think so I think it took about 30 minutes.
Unfortunately I wasn't paying attention to the time.
I had taken some pork chops from the freezer and let them thaw, so I pan fried those as well, and we had what can only be described as comfort food for dinner.
Luckily both Steve and my cholesterol numbers are great.
