I'm headed out of town for a few days and needed to use up some veggies that would not be good by the time I get back. One item was a cucumber.
In the summer it is not uncommon for me to simply slice up a cucumber, give it a splash of white vinegar and some water, salt and pepper it, and fish those cucumber slices out of the bowl for a nice snack.
If I am planning ahead, though, I will peel and slice a cucumber and then cut some thin slices of white onion. Realły any onion will do. Red onion is especially good.
Into a bowl they go. Everything else is all about what fits your taste. Season with salt and black pepper, and a small amount of sugar.
Pour in a little white vinegar then add water to cover. Mix well and then taste one of the slices. Adjust the seasoning or amount of vinegar to your taste.
Then put it in the fridge. An hour at least is good, and they make a crisp, fresh side dish for your meal.
