It was easy. I just gathered up the ingredients and whisked them together. I guess you can't see the peanut butter and sugar in the ramekin. Oops.
I had cucumber, carrot, and red pepper in the fridge.
Tossed with the vinaigrette, and topped with a cashew-sesame salad dressing mix I had in the pantry.
