Roasted Red Peppers and Arugula--A Favorite Salad

The other day I roasted a red pepper before it descended to a state only fit for the compost bin.  I put it in a jar, covered it with olive oil, and put it in the fridge.  I knew one of my favorite salads was in my near future. 


Today I picked up some baby arugula at Aldi's, and tonight it was time for salad. Unfortunately I forgot pine nuts!  Next time toasted pine nuts for sure. 

But for tonight all I needed was:

Arugula 
Roasted red peppers in olive oil
Parmesan cheese
Lemon
Black pepper


Add the red pepper to the arugula. Squeeze a little lemon juice over it. It basically makes its own dressing. Shave Parmesan cheese over the salad. Goat cheese is good too. Add a few grinds of black pepper, toss, and you have a delicious salad that is both sweet with the red pepper and has the bite of the arugula and black pepper.
