No Recipe - Bacon, Beans, and Rice

I felt like having some bacon this morning. I had some bacon from #barhamfamilyfarm in the fridge. 

I didn't want to eat JUST bacon though. 

So I thought about it for awhile, and nosed around in my pantry and fridge, and came up with this. 

And it was so good I think I will do it again. 

I started up the rice cooker first. 

I cut the bacon in half inch pieces and put it in a large skillet over medium high heat. 

While that got a start I chopped some onion, minced some garlic, and added those to the bacon. I seasoned with salt and pepper and lowered the heat to medium. 


While the onions softened and the bacon started crisping, I drained a can of dark red kidney beans and pulled some spices from the cupboard. 

I added the beans, chipotle powder, smoked sweet paprika, cumin, and some  oregano. Then let that simmer until the rice was done. 


Once the rice was done, I added it to the pan. 


And then it was time to eat.
