I had good intentions for this evening. I was going to marinate a flank steak, grill it, and slice to make a steak salad.
Tired on a Friday night, all I did was grill the flank steak in a pan.
I preheated a cast iron grill pan over medium-high heat, with a pat of butter and a little olive oil.
Rubbed the steak with garlic, seasoned generously with salt and pepper, and when the pan was hot I grilled that steak 4 minutes on one side, and 3 minutes on the other (should have done 4).
Then I let the steak rest for 10 minutes.
And sliced it on the diagonal, against the grain.
