Pear Muffins

I am getting produce from my CSA each week for a couple more weeks. This is what is called the extended season. And there are many fewer families in the extended season. 

Basically this means we got lucky because there were enough pears from the lone pear tree at the farm that we each got a bag of them.


I wanted to bite into little bits of pear, so decided against grating the pears as described in several recipes.

 I looked through several different recipes and ultimately came up with what follows.

Pear muffins

Preheat oven to 400 Fahrenheit. 

Grease bottom only of 12 muffin tin

2 cups flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
Cinnamon 
Nutmeg
(I'll let you decide. I only used a pinch of nutmeg and maybe 1/4 teaspoon cinnamon. Could have used a little more)

Whisk together to combine

In another small bowl,beat one large egg. Add 2/3 cup milk and 1/4 cup oil



Peel and dice fairly firm pears to make a cup. 1/4 inch dice. Toss a little of the flour mixture with the pears. 

Make a well in the flour and add the wet mix.

Fold about 12 times then add the pears and fold a few more times just until all the dry is incorporated. 



Fill 12 muffin cups,


 bake 15-20 minutes. Mine were done at 15. 

These are not very sweet, which I like.
