Avocado, Cucumber, and Tomato Salad


AKA What is in my fridge salad?

I had bought a bag of avocados at Sam's club, and needed to use them.  I also wanted something to eat with the chili I was heating up for dinner.

I nosed around in my produce drawer and this is what I found



First was peeling, seeding, and chopping the cucumbers.


Then the tomatoes.



I scored the avocado halves in their peels, and scooped them out next.



There was a bag of frozen peppers in the freezer so I took out a jalapeƱo and seeded and diced it.  As always, use gloves when handling peppers!  I wasn't sure how hot it would be, so initially I only added 1/2 the pepper, but later I added the rest.


I can never have too much cilantro!




For a dressing I took some sour cream, sprinkled in some lime juice, added some cumin, and some piment d'espellete.


And into the bowl it all went.  I did adjust the seasonings some after, adding more cumin, a bit of salt, and the rest of the jalapeƱos.


Super easy, no recipe, and very good.
