And I wanted something to soak up the sauce, but I didn't have any potatoes. I did have Cauliflower however.
I nosed around online and on Pinterest, and the method I decided on depended heavily on removing all the water from the cooked cauliflower.
I decided to cook the Cauliflower in the microwave. I put it in a pyrex measuring cup, added a little water and topped it with waxed paper. It ended up being six minutes before it was as tender as I wanted it to be.
Following the tips I found, I mashed the Cauliflower through a fine mesh strainer to squeeze out as much water as possible.
Then it was all about adding a little butter and half and half, salt and pepper, and mashing it.
It wasn't quite as smooth as I wanted it to be, but it did the job!
