No recipe - just Aldi's Red Curry Simmer Sauce

I have been on a crazy travel schedule, so have a lot of catching up to do here.

My nephew and his family were here for the weekend, but besides the chocolate cake I baked, everything I made has already been a subject of a blog post.    

They went home this morning, so tonight I went quick and easy, and tried out the Aldi's Thai Red Curry simmer sauce that my nephew and his wife convinced me to try.


In addition to the chicken, the instructions are to add the vegetables of your choice.  I had a red pepper, sweet onion, and mushrooms.  I deemed them perfect for the purpose.  You finish it with lime juice as well, and luckily I had some limes in the produce drawer.



The jar says to use two tablespoons of vegetable oil to brown the chicken.  I used peanut oil, because I wanted to.  And also, I like the flavor.  The chicken is only browned a few minutes on each side.


Followed by adding the veggies and stirring together.



Then adding the whole bottle of sauce.


After stirring in the sauce, you bring it to a simmer, cover, and cook about 15 minutes until both chicken and vegetables are done.


Normally I would serve over rice, but I have over indulged in carbs lately, so I basically ate this like it was soup, without the rice.  I squeezed in some lime juice, and although I didn't have any Thai basil, regular basil was a fine substitute.  

This is definitely a new pantry item for easy meals.  it's moderately spicy.  A little Sambal Oelek would add any heat if you want it.
