Fast and Easy Canned Chicken Chili

Gourmet this is not.  But, it was so good that I decided I needed to write it down so I could repeat it later.



I was just going to eat a can of chicken for dinner when I noticed that the label on the can had recipes inside.  I didn't make one of the recipes, but it gave me ideas.  This ended up being really good, fast, easy, and used things I generally always have in the pantry.  Mostly canned goods!

Fast and Easy Canned Chicken Chili

2 Large cans chicken, drained
1 can dark red kidney beans
1 small can enchilada sauce
1 can Ro-tel
1 T chili powder
1 T cumin
1 T garlic salt
1 T oregano
1 t onion powder

Stir it all together, bring to a boil, then lower to a simmer and simmer for 30 minutes.

I topped this with some greek yogurt (didn't have any sour cream) and some home canned pickled jalapeƱos.
