Merri's Faux Chicken Piccata


I've posted this before I think, but because this blog is named What's Happening in Merri's Kitchen, I'm posting it again since this is indeed what happened in my kitchen tonight.


I had some chicken cutlets and decided to do them piccata style.


First I heated some olive oil in a pan, and seasoned two chicken cutlets with garlic salt and Italian Seasoning.




While I cooked the chicken




I cut up some canned and drained artichoke hearts, and quartered a lemon, and got some capers out.





Once the chicken was done I removed it, deglazed the pan with a squeeze of lemon juice, and added the artichoke hearts and capers.



After browning up the edges of the artichokes a bit, I added some butter and there rest of the lemon juice from my lemon, and cooked it down.




Then I served it with a Caprese salad.
